Fifteen years behind bars in Austin and New Orleans. Wes built the Ghost Town list around tableside smoke and small, precise gestures. Believes a single ice block tells you more about a bar than its bourbon shelf.

Trained under London's Connaught Bar program and ran the stick at a quiet Brooklyn cellar before coming to Texas. Eliza writes the seasonal menu and ferments most of the bar's syrups herself.

Certified Kentucky bourbon steward and Ghost Town's keeper of the back-bar vault. If there's a barrel-strike from before 1985 in the building, Marcus has tasted it twice.
